CRAWFISH SEASON IN NEW ORLEANS
Crawfish are freshwater crustaceans found throughout Louisiana’s bayous, rivers, and swamps. A staple of New Orleans cuisine, they show up in everything from étouffée to po’boys—but nothing beats peeling and eating them straight from a steaming hot boil. Crawfish season runs from late winter through early summer, peaking between February and May. That’s when they’re at their biggest, juiciest, and most flavorful—perfect for a classic crawfish boil in the courtyard.
